Mozzarella, melon, and nectarine salad with green lettuce leaves and walnut and balsamic cream dressing

Ingredients for 2 servings:

  • 1 mozzarella
  • 500 g melon(s) (watermelon)
  • 2 nectarines, ripe
  • 3 leaves of lettuce, green (of your choice)
  • 2 tbsp vinegar (walnut)
  • 4 tbsp olive oil
  • 1 tsp sugar, brown
  • 3 sprigs of parsley
  • Salt
  • black pepper, freshly ground
  • 1 dashes balsamic cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Refreshingly light and suitable for summer for 2 people

Mix all the dressing ingredients together in a bowl. Finely chop the parsley and add it to the dressing. Finely dice the mozzarella and add it to another bowl. Peel the melon, remove the seeds, cut into small cubes, and add it to the bowl. Deseed the nectarines, cut into small cubes, and add it to the bowl. Tear the lettuce into small pieces and add it to the bowl. Stir everything together well, toss with the dressing, and serve. Very light and delicious. Goes well with anything pan-fried, or even just a baguette.
