Mozzarella pizza soup with garlic sticks

Ingredients for 2 servings:

  • 1 large onion(s)
  • 2 garlic cloves
  • 1 m.-large zucchini
  • 1 bell pepper
  • 700 g tomato sauce (tomato pulp)
  • 3 balls of mozzarella
  • some cheese, grated
  • 1 pack of pizza dough
  • e.g. Italian herbs (oregano, basil,…)
  • e.g. salt and pepper
  • e.g. olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Finely chop the onion and a clove of garlic and fry in oil, then chop the zucchini and bell pepper and fry them in the same way. Add the tomato sauce and simmer for about 15 minutes. Season the sauce with Italian herbs, salt, and pepper. Pour the sauce into an ovenproof casserole dish. Halve the mozzarella balls and press them cut-side up into the casserole, then sprinkle with some grated cheese. Bake everything in a preheated oven at 200°C for 20 minutes. In the meantime, roll out the pizza dough and cut into strips (about 2-3 cm). Bring the strips together at the ends and twist them. Bake the sticks in the oven for about 10 minutes. During the baking time, mix together the oil, a crushed clove of garlic, Italian herbs, and a little salt, if desired, and brush the baked sticks with it. Fresh basil and green leaf salad go well with this dish.
