Muesli cookies for diabetics

Ingredients for 1 servings:

  • 80 g sweetener (Sionon diabetic sweetener)
  • 1 egg(s)
  • 6 tbsp cream
  • 2 tbsp milk
  • 200 g flour (wheat flour, also wholemeal)
  • 1 tsp cinnamon
  • 1 pinch of cardamom
  • 1 orange(s), peel
  • 35 g hazelnuts
  • 15 g oat flakes
  • 15 g sesame seeds
  • 20 g dark chocolate (also diet)
  • 5 g palm fat

Instructions

Working time approx. 1 hour 20 minutes; Total time approx. 1 hour 20 minutes

Whisk the diabetic sweetener with the egg until frothy. Add the cream and milk. Mix with the sifted flour and spices. Stir in the ground hazelnuts, oats, and sesame seeds. Chill for about 1 hour. With floured hands, form 40 balls and place them, not too close together, on a baking sheet lined with parchment paper. Flatten slightly with a fork. Bake for 20 minutes at approximately 180°C. Melt the chocolate with the coconut oil in a water bath. Decorate the cooled cookies with the balls.
