Ingredients for 2 servings:
- ½ cup mung beans
- 1 bell pepper(s)
- 1 half cucumber(s)
- 1 large onion(s)
- Oil for frying
- Olive oil for the dressing
- 1 half lemon(s), juice
- Ras el Hanout
- cumin
- salt and pepper

very healthy and tasty, for 2 people as a starter or side dish
Cook the mung beans according to the package instructions and then drain. Dice the onion and fry in the oil until golden brown. This is very important, as the onion is the main flavor source in this recipe. Dice the bell peppers and fry them as well, if desired. Dice the cucumbers. Mix all ingredients with olive oil and lemon juice and season to taste. The salad can also be garnished with fresh herbs, such as mint and parsley, or sprinkled with black cumin. If you like, you can also mix garlic (fresh or sautéed) into the salad.
