Sift the flour and knead with the baking powder, sugar, vanilla sugar, egg, and butter to form a smooth dough. Wrap the dough in aluminum foil and refrigerate for about 30 minutes. Dust the work surface with flour and roll out to a thickness of about 2 mm. Cut out cookies (I always use a round glass). There must be an even number of cookies. Place on a baking sheet lined with baking paper and bake in a preheated oven at 200°C (top/bottom heat) for about 12-15 minutes. Once cooled, spread strawberry jam on one cookie and place another on top. Continue doing this until all the cookies are used. Melt the chocolate coating in a water bath and spread it over the cookies. Then let it sit for about 1 day before placing it in a tin. The cookies will keep for about 8-12 weeks in an airtight container. Do not store in too cold a place, as otherwise they will not taste as good. They are best when they are about 1 – 2 weeks old and already a bit soft.
