Lemon cookies

Ingredients for 100 servings:

  • 250 g butter, soft
  • 250 g sugar
  • 3 eggs
  • 125 g cornstarch
  • 1 packet of vanilla sugar
  • 1 tsp baking powder
  • 1 pinch of salt
  • 2 bottles of lemon flavoring
  • 500 g flour

Working time approx. 20 minutes; Total time approx. 20 minutes

Cream the butter, sugar, vanilla, salt, lemon flavoring, and eggs until fluffy. Mix the Mondamin/cornstarch with the flour and gradually stir in, kneading well by hand towards the end. The dough should no longer stick. The dough can either be rolled out and cut out or processed well using a baking press. Place the cookies on a greased baking tray and bake at 210 degrees on the middle rack for about 10-12 minutes. The cookies are delicious, not too sweet, and perfect for summer. You can then of course cover them with lemon glaze and maybe sprinkle some colorful sugar sprinkles. Then the kids will have more fun baking.
