Mushroom and spinach lasagna

Ingredients for 3 servings:

  • 1 pack of creamed spinach
  • 500 g mushrooms
  • 2 shallots
  • 1 clove(s) garlic
  • some Parmesan cheese, for topping
  • Lasagna sheet(s)
  • Salt
  • pepper
  • 1 cup sour cream

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Finely dice the shallots and sauté in a little oil until translucent. Crush the garlic and fry briefly. Then add the sliced ​​mushrooms and sauté, seasoning with salt and pepper. Meanwhile, prepare the creamed spinach according to the package instructions. When the mushrooms are ready, mix with the spinach. Spread a little sour cream or spinach on the bottom of the baking dish to prevent the lasagna sheets from sticking. Then alternate layers. I add a little more sour cream to the top layer of lasagna sheets before scattering the Parmesan cheese over them. Bake at 180°C fan-assisted oven for about 20 minutes on the middle rack.
