Mushroom and zucchini pan with shrimp

Ingredients for 2 servings:

  • 250 g mushrooms, brown
  • 250 g zucchini
  • 25 g spring onion(s) (leftover from the previous day, not necessary)
  • 70 g onion(s), fresh
  • 2 cloves garlic
  • 5 g chili pepper(s), pitted
  • 200 g shrimp(s), (Pacific Prawns), frozen, ready to eat
  • 2 tbsp olive oil
  • salt and pepper
  • possibly chili powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Thaw the shrimp. Chop all the vegetables as desired, finely chop the garlic and chili (seeded). Heat the oil in a suitable pan (or shallow pot), add all the vegetables and spices, and simmer for about 10 minutes over medium heat with the lid on. Stir in the shrimp, heat through, and season to taste. Serves 2 as a side dish with pasta, rice, or bread (ciabatta, flatbread, etc.); it’s sufficient for one person without a side dish.
