Mushroom broccoli Thai curry noodles

Ingredients for 4 servings:

  • 500 g pasta
  • 1 head of broccoli
  • 500 g mushrooms
  • 1 onion(s)
  • 1 clove(s) garlic
  • 2 tsp curry paste, red
  • 3 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp sambal oelek
  • Salt
  • pepper
  • Herbs of Provence

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

vegetarian

Chop the broccoli, mushrooms, onion, and garlic. Meanwhile, cook the noodles. Heat the oil with soy sauce and red curry paste in a wok. Sauté the onions and garlic. Then stir-fry the vegetables (I stir-fried everything in the wok for about 10 minutes), seasoning with salt, pepper, and herbs to taste. Serve the noodles with the vegetables.
