Mushroom bruschetta

Ingredients for 8 servings:

  • 250 g mushrooms
  • 1 m.-sized onion(s)
  • some vegetable oil
  • 1 handful of arugula
  • 2 m.-large tomato(s)
  • 100 g cheese (mountain cheese)
  • salt and pepper
  • 1 white bread stick(s), sliced

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Clean the mushrooms, peel the onion, and wash the arugula and tomatoes. Cut everything into very small cubes, or cut the arugula into thin strips. Grate the mountain cheese. Heat the oil in a pan and sauté the onion and mushrooms. Add the tomatoes and arugula and let them simmer for a while. Finally, add the mountain cheese. Spread the finished mixture onto slices of white bread and bake in the oven at 170°C for about 12-15 minutes. The mixture can be prepared in advance and spread on the bread and baked just before guests arrive.
