Mushroom ragout made from wild mushrooms

Ingredients for 4 servings:

  • 2 tbsp vegetable oil
  • 100 g ham, Serrano or other raw
  • 600 g mushrooms, cleaned (wild mushrooms!)
  • ½ onion(s)
  • 150 ml cream
  • 250 g bread(s) (dumpling bread)
  • ½ onion(s)
  • e.g. parsley
  • 2 eggs
  • 150 ml milk
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brown the ham and onion in hot oil. Add the mushrooms and sauté thoroughly. Season with salt and pepper. Add the cream and season to taste. Make a bread dough from the dumpling bread, onion, eggs, milk, parsley, salt, and pepper. To do this, soak the dumpling bread in a bowl with the lukewarm milk. Finely chop the onion and sauté in a little oil in a hot pan until translucent. Then add it to the dumpling bread along with the parsley. Mix well with the eggs and seasonings and form 4 large dumplings. Place them in boiling salted water and simmer over low heat until tender. A simple, quick, and very tasty mushroom dish. Serve with salad!
