Spelt flambe with rice milk and vanilla

Ingredients for 4 servings:

  • 1 liter rice – milk or other
  • some vanilla pulp or grated tonka bean
  • some lemon peel, about 1/2 organic lemon, grated
  • 100 g semolina (spelt semolina)
  • 2 egg yolks
  • 2 egg whites
  • 3 tbsp raw cane sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

warm breakfast on cold days or cold as dessert

Bring the rice milk and spices to a boil and add the semolina, stirring constantly. Let the semolina swell on low heat for 10 minutes. Stir occasionally and let cool slightly. Stir in the egg yolk. Beat the egg whites with the sugar until stiff peaks form and gently fold in. This is delicious with compote, fruit puree, or elderberry sauce.
