Mushroom ragout with smoked tofu

Ingredients for 4 servings:

  • 250 g mushrooms
  • 250 g shiitake mushroom(s)
  • 1 carrot(s)
  • 1 stalk(s) celery
  • ½ chili pepper(s)
  • 3 cloves garlic
  • 200 g smoked tofu
  • 4 tbsp sesame oil
  • 3 tbsp soy sauce
  • 2 tbsp miso paste (shiro miso)
  • 15 g ginger
  • 1 tbsp maple syrup
  • salt and pepper
  • Lime juice
  • spring onion(s)
  • coriander
  • Sesame, roasted

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Wonderful autumnal mushroom dish with an Asian touch!

1. Finely chop the mushrooms, shiitake mushrooms, carrots, garlic, chili, and celery. 2. Add sesame oil to a pan, sear the tofu, and then add the chopped vegetables. 3. Now add the remaining ingredients and simmer over low heat for 10 minutes. Add a little water if needed. 4. In the meantime, serve your desired side dish. 5. Finally, season with salt, pepper, and lime juice and garnish with toasted sesame seeds, spring onions, and cilantro.
