Ingredients for 4 servings:

  • 500 g mushrooms
  • 3 tbsp lemon juice
  • 4 tbsp raspberry vinegar
  • 5 tbsp olive oil
  • 4 tbsp oil (nut oil)
  • 2 tbsp Dijon mustard
  • 5 tbsp mayonnaise (herb mayonnaise)
  • 1 tbsp sugar
  • 1 tbsp herbs (herb mix), dried
  • 1 tbsp oregano, dried
  • 1 tbsp paprika powder, hot
  • some sea salt
  • some black pepper, freshly ground
  • 2 tbsp parsley, finely chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

with raw mushrooms

Clean the mushrooms dry and slice, halve, or quarter them depending on their size and preference. Combine the lemon juice, vinegar, and oils, then stir in the mustard, mayonnaise, sugar, and herbs. Season with salt, pepper, and paprika. Add the sauce to the mushrooms, mix well, and let stand for at least an hour. Season again with herbs, salt, or pepper, if desired. Sprinkle with parsley before serving. Tip: This also works with fresh herbs.
