Mushroom tartar soup

Ingredients for 1 servings:

  • 1 onion(s)
  • 300 g mushrooms
  • 1 tsp olive oil
  • 60 g tartar
  • 125 ml low-fat milk
  • 250 ml vegetable stock, mixed with 1 tsp instant powder
  • 2 tbsp processed cheese
  • salt and pepper
  • Paprika powder
  • e.g. chili powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Quick and easy

Peel and dice the onion. Trim and slice the mushrooms. Heat the oil in a pan and fry the tartar until crumbly. Add the onion and mushrooms and fry for another 5 minutes. Season generously with salt, pepper, and paprika, and deglaze with the milk and broth. Simmer the soup for about 2-3 minutes. Stir in the cream cheese, bring to a boil briefly, and season to taste with salt, pepper, and paprika. For those who like it spicier, you can use chili powder instead of paprika.
