Ingredients for 4 servings:

  • 500 g onion(s)
  • 1 tbsp butter
  • 800 ml vegetable stock
  • 150 ml white wine
  • 4 slices of toast
  • 4 tbsp Gouda, grated
  • 4 tbsp Parmesan, grated
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Peel the onions and slice or grate them into thin rings. Sauté them in a saucepan with the butter. Deglaze with wine and add stock. Simmer for a good 15 minutes. Cut out toast the size of a mug and then toast in a toaster or oven until golden brown. Ladle the finished soup into mugs and place a piece of toast on top of each. Sprinkle with Gouda and Parmesan cheese and briefly gratinate in the oven until the cheese has a nice color and has melted. To serve, place the soup mug on a saucer. Be careful, the mug and soup are very hot; you can easily burn your fingers on the rim of the mug or (when spooning the hot soup) your mouth!
