Mushrooms in Parmesan cream sauce with gnocchi

Ingredients for 2 servings:

  • 250 g gnocchi (refrigerated section)
  • 250 g mushrooms, brown, medium-sized, quartered
  • 250 g cream
  • 50 g Parmesan
  • 2 tbsp soy sauce
  • 1 bunch of chives
  • 1 onion(s), red, diced
  • 1 tbsp honey
  • Salt and pepper, colorful
  • 2 tbsp olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Heat olive oil in a large pan, add the quartered mushrooms, and fry until crisp. The pan must be very hot when adding the mushrooms. Heat more olive oil in a second small pan. Then heat the diced onion with the honey until lightly caramelized. Add the caramelized onions to the mushrooms. Heat the mushrooms and onion until very hot and deglaze with soy sauce, then pour in the cream. Once the cream has boiled, add the grated Parmesan, reduce the heat, and give the cheese time to melt. Then add the chopped chives and season with salt and pepper. Add the gnocchi and stir in. Serve on a plate and top with some more shaved Parmesan and mixed pepper.
