Generously mix the meat with the gyro seasoning, sear it in a pan, and then add it to a pot. Now fry the sliced onions and add them to the pot. Add the tomato paste to the pot and increase the heat. Fry the thinly sliced bell peppers and add them to the pot. Finely chop the garlic cloves and add them to the pot without frying. Drain the sauerkraut, add it to the pot, and heat everything through. Now deglaze with the stock and simmer with the diced potatoes on a low heat for 30 minutes. Season everything with paprika, salt, and pepper. Season well, as the potatoes will absorb some of the flavor. Now turn off the heat and let everything sit overnight, ideally.
