Ingredients for 4 servings:
- 1,000 g mushrooms
- 1 large onion(s)
- 1 clove(s) garlic, crushed (more to taste)
- 1 tbsp olive oil or rapeseed oil
- 150 g ham, cooked without fat, in one piece
- 200 g tomatoes
- 1 bunch of parsley
- salt and pepper
- 50 ml water or vegetable stock

Clean, wash, and halve the mushrooms. Finely chop the onion and sauté with the garlic in oil. Then add about 50 ml of water or stock. Add the mushrooms, stir well, and simmer covered for about 10 minutes. Dice the ham, peel the tomatoes, halve them, and remove the stems and seeds. Roughly dice the flesh. Add the ham cubes to the mushrooms and continue to cook uncovered until all the liquid has evaporated. Season the dish with salt and pepper. Finally, add the diced tomatoes and heat through. Sprinkle with parsley to serve. Serve with whole-wheat pasta or whole-wheat rice. Per serving, approx. 6 g carbohydrates (1/2 BE), including whole-wheat pasta or rice. 4 g fat and 19 g protein.
