French hunter-style beef fillet

Ingredients for 4 servings:

  • 4 fillet steaks of beef
  • 4 shallots
  • 2 large onions
  • 150 g mushrooms
  • 1 sprig(s) rosemary
  • 1 sprig(s) of thyme
  • 100 ml extra virgin olive oil
  • 1 bunch of flat-leaf parsley
  • Salt and pepper, from the mill

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Hunter’s Tournedos

Rub the beef fillets with oil and set aside. Chop the onions, shallots, and half of the parsley. Sprinkle with the thyme leaves and finely chopped rosemary leaves, and season with salt. Sauté everything in the remaining oil. Wash the mushrooms, if fresh, then chop them finely and add them. Cover and reduce the heat to low. Season the beef with salt and pepper and fry briefly and quickly. To serve, slice the meat, garnish with the contents of the pot, and chop and sprinkle the remaining parsley over the top. Enjoy!
