My favorite beef curry

Ingredients for 4 servings:

  • 150 g dried apricots
  • 1 vegetable onion(s)
  • 600 g beef goulash
  • 2 tbsp oil
  • Salt
  • 1 tbsp curry powder or Thai curry paste
  • 1 tbsp coriander powder
  • Tomato paste
  • 700 ml beef broth
  • 1 tbsp cornstarch
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Quarter the dried apricots, peel the onion, and slice it into wedges. Brown the beef goulash until golden brown, add the onion wedges, and season with salt, curry powder, cayenne pepper, and coriander. Toast a little tomato paste, add the apricots, and deglaze with the broth. Simmer for about 1.5 hours, adding a little more water or broth if needed. Season to taste and thicken with cornstarch if necessary. Serve with rice, a fresh salad, and low-fat yogurt.
