Ingredients for 2 servings:

  • 500 g potatoes, from the previous day
  • 100 g gherkins, small
  • 50 g cucumber(s)
  • 1 banana(s)
  • 3 tbsp mayonnaise
  • 1 tbsp vinegar
  • salt and pepper
  • curry powder
  • marjoram
  • Thyme

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Potato – using leftovers

Cut the potatoes, pickles, cucumber, and banana into equal-sized pieces and place everything in a bowl. For the dressing, combine the mayonnaise and vinegar and gently toss with the salad ingredients. Season to taste with salt, pepper, marjoram, thyme, and be sure to add the curry powder! The curry goes very well with the banana!
