Fresh potato salad

Ingredients for 4 servings:

  • 800 g potato(s), small, waxy
  • 4 onions
  • 3 apples
  • 200 g yogurt
  • 2 tbsp lemon juice
  • 1 small can of corn
  • 6 pieces of sausage (Vienna sausages)
  • 6 tbsp mayonnaise
  • 4 tbsp vinegar (wine vinegar)
  • 1 tsp mustard
  • 1 bunch of chives
  • Salt
  • pepper
  • Sugar

Instructions

Working time approx. 45 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 45 minutes

First, boil the potatoes in their jackets. Once the potatoes are cooked, drain them, let them cool, peel them, and slice them. Peel the onions, quarter them, and cut them lengthwise into strips. Wash the apples, quarter them (remove the cores!), and slice them into small pieces without peeling them. Drizzle the pieces with a tablespoon of lemon juice. Slice the sausages and add them to the bowl along with the potatoes, corn (drain off any liquid from the can), onions, and apples. For the marinade, mix the mayonnaise, yogurt, vinegar, a tablespoon of lemon juice, mustard, salt, pepper, and sugar. Pour it over the salad, stir it through, and let it marinate for a few hours. Wash the chives and cut them into 1 cm pieces. Stir them into the salad just before serving.
