Ingredients for 4 servings:

  • 250 g bacon, finely diced
  • 1 onion(s)
  • 1 carrot(s)
  • 50 g butter
  • 1 clove(s) garlic
  • 1 liter chicken broth or vegetable broth
  • 250 g split peas, green
  • Parsley, finely chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours

Finely dice the bacon, onion, and carrot. Melt the butter, add everything, and sauté briefly. Add the garlic clove. Pour in half of the stock. Add the peas. Simmer for one and a half hours, stirring frequently, and add more stock as needed. The creamy consistency will only develop after about 45 minutes of cooking. At the end, stir in plenty of finely chopped parsley and bring back to a boil. Serve with Vienna sausages, if desired.
