Ingredients for 4 servings:

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp garlic, finely chopped
  • 400 g chicken breast, cut into strips
  • 1 egg(s), beaten
  • 1 cup rice, cooked (cold, preferably from the day before)
  • Salt and pepper, black from the mill
  • 2 tbsp curry paste, red
  • ½ cup white cabbage, shredded
  • ½ cup green beans, cut diagonally about 2cm
  • ½ cup carrot(s), sliced
  • 1 red bell pepper(s), cut into fine strips
  • Sambal Oelek or chili
  • 4 eggs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Fried vegetable rice with fried egg according to Indonesian recipe

Prepare all ingredients and have them ready. Heat the oil in a wok or large frying pan and stir in the butter. While the butter is melting, add the chopped garlic. Add the chicken and fry until white. Add the egg, lightly beaten with a fork, to the pan and fry for 1-2 minutes, stirring constantly. Now add the cold rice to the pan. Mix everything well until the rice is warmed through. Season with salt and pepper. Stir in the curry paste well. Fold in the prepared vegetables and mix everything well. Season to taste and adjust the heat to your liking with chili or sambal oelek. Remove the nasi goreng from the heat and arrange on four plates. Now prepare the fried eggs and place them on top of each one. Sprinkle some more pepper and chili over the fried eggs and serve. Note: Vegetarians can omit the chicken and replace it with vegetables (baby corn, etc.). It also tastes delicious with shrimp or tofu instead of the meat.
