Ingredients for 4 servings:

  • 500 g low-fat curd cheese
  • 2 eggs
  • 150 g sugar
  • 60 g butter, liquid
  • ½ liter of milk
  • 150 g rice pudding, raw
  • ¼ tsp lemon zest, grated
  • 200 g sultanas
  • 0.12 liters of cognac
  • 40 g walnuts, roasted

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Soak the sultanas in cognac. Whisk together the quark, eggs, sugar, and melted butter. Add the milk, rice pudding, and grated lemon zest, then stir in the sultanas. Pour the mixture into a greased casserole dish and bake in a preheated oven at 200°C for about 50 minutes. Roast the walnuts in a dry pan until golden brown and sprinkle over the casserole. Garnish with the sultanas and serve hot.
