taste of Italy and have a fine filling, makes about 40 pieces
Beat the butter and powdered sugar until fluffy. Stir in the egg yolks, vanilla sugar, orange juice, and zest. Combine the flour, cocoa powder, and espresso powder. Quickly knead into the egg yolk mixture until a smooth dough forms. Wrap in plastic wrap and chill for 1 hour. Preheat the oven (175°C top/bottom heat). Line the baking sheets with baking paper. Roll out the dough on a floured surface (preferably between two sheets of baking paper, as the dough is a bit sticky). Cut out round or oval cookies and place them on the baking sheet. Bake in the oven at 175°C for about 10 minutes. Remove from the baking sheet using the paper and let cool. Mix the marzipan with the orange marmalade. Spread it on half of the cookies and arrange it on top of the uncoated cookies. For the decoration, chop the chocolate coating into small pieces and melt it in a water bath. Fill into a piping bag with a fine nozzle and pipe fine lines onto the cookies.
