Ingredients for 1 servings:
- 1 handful of nettle leaves, young, before flowering, approx. 30 g
- 125 g wholemeal spelt flour
- 1 pinch of cream of tartar baking powder
- 125 g wheat flour type 1050
- 300 ml milk
- 2 eggs
- salt and pepper
- Fat for the mold
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
First, wash, chop, and blanch the nettle leaves. Puree the nettle, eggs, and milk. Mix the flour, baking powder, egg-milk mixture, and spices into a smooth batter. Pour into a greased baking dish and bake in a preheated oven at 180°C for about 30 minutes.
