New Year’s Cake from East Frisia

  • 350 g Rock candy
  • 750 ML Water
  • 500 g Flour
  • 250 g Butter
  • 3 Eggs
  • 2 tsp. Cardamom
  • 3 tsp. Anise
  • 1 ½tsp. Cinnamon
  • 1 ½tsp. Salt
  1. Preparation 1: Dissolve rock candy in hot water. Mix 250 g butter and eggs until frothy. Stir in the cooled rock candy water and flour alternately, then add the spices.
  2. Baking: Grease the iron a little and let it get really hot. Only take the finished New Year’s cake out of the New Year’s iron when it is no longer steaming. (Or by feeling) Then you are really golden brown and crispy. We have been eating them according to this recipe for years.
