Ingredients for 8 servings:
- 2 heads of frisée lettuce, washed
- 125 g lamb’s lettuce, washed
- 375 g cocktail tomatoes, halved
- 150 g green olives, stuffed
- 10 slices of cheese (Gouda), 1/2 cm thick, room temperature
- 2 jars of cucumber(s), (honey pickles), drained, 215g each
- 8 tbsp vinegar (herb vinegar)
- 2 tsp mustard, medium hot
- 2 m.-large onion(s), finely chopped
- some salt
- some pepper, fresh, black, ground
- 5 tbsp cucumber juice
- 3 tbsp chives, in rolls
- 3 tbsp parsley, chopped
- 6 tbsp oil (safflower oil)
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Tear the frisee lettuce into bite-sized pieces. Slice the olives. Use a pastry cutter to cut out stars or similar shapes from the cheese slices. Drain the honey pickle pieces and cut them into small cubes. Arrange all ingredients loosely on a platter. For the dressing, combine all the remaining ingredients and stir in the oil. Pour over the salad and serve. Serve with a baguette.
