Ingredients for 1 servings:

  • 500 g flour
  • 30 g yeast
  • 60 g sugar
  • ¼ liter milk, lukewarm
  • 60 g butter, room temperature
  • 1 egg(s)
  • 1 pinch of salt
  • 1 lemon(s), grated peel
  • 1 egg yolk for brushing

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Dissolve the yeast in a little lukewarm milk, add the sugar, stir it into the sifted flour, and mix lightly. Let the pre-dough rise for about 15 minutes. Then add the remaining milk, butter, 1 egg, salt, and lemon zest and knead everything into an elastic dough. Cover the dough and let it rise in a warm place until it has doubled in size. Then gently knead it, shape it into a long roll, and twist it into a pretzel. Let it rise for another 15 minutes. Brush with beaten egg yolk before baking. Bake at 200°C (top/bottom heat) for 25-30 minutes until golden brown.
