Ingredients for 1 servings:
- 600 g carrot(s), grated
- 3 lemons, juice
- 2 oranges, juice
- 100 g almonds, ground
- 150 g sugar-free muesli
- 150 g whole grain flakes (whole wheat flakes)
- 100 g raisins, finely chopped
- 50 g dates, chopped
- 4 tsp honey
- 2 tsp cinnamon

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes
as a small main course or large dessert
Knead all ingredients together, pour into a 28cm springform pan, and press firmly. Cover with cling film, add a weight, and refrigerate for 3-4 hours. Decorate with nuts, etc., if desired. The cake will keep refrigerated for 3-4 days. 310 kcal per person (cake serves approx. 4 people)
