Ingredients for 2 servings:
- 1 handful of mixed nuts
- 3 bell peppers, green, yellow and red
- 2 dashes sunflower oil
- 2 cups rice
- 2 cups water
- Salt
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Dry-roast the nuts in a pan and set aside. Cover the rice and simmer in twice the amount of lightly salted water until the water evaporates. Sauté the peppers (or zucchini and tomatoes, if desired) in oil. You can also puree the vegetables. Serve the rice with the vegetables and nuts.
