Noodle and mushroom pan

Ingredients for 3 servings:

  • 500 g wild mushrooms
  • 1 onion(s)
  • 200 g smoked turkey breast
  • 300 g pasta
  • e.g. fat or oil for frying
  • salt and pepper
  • 1 pinch of nutmeg
  • 2 eggs, if necessary

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 40 minutes

Clean the mushrooms and cut into pieces. Cook the pasta in salted water as usual and drain. Meanwhile, peel and finely dice the onion and also dice the smoked turkey breast. Sauté the mushrooms in oil or fat over high heat. Add the onions when the mushroom liquid has almost evaporated, then continue frying over medium heat. Add a little more fat or oil if necessary. Add the smoked turkey breast when the onions are translucent. Sauté everything over low heat until the meat is lightly browned. Then add the pasta and fry everything over high heat until the desired degree of browning is reached. Season with pepper and nutmeg. Serve with one or two fried eggs. As a variation, the eggs can also be added to the pan at the end and stirred until set.
