Noodle soup with sausages

Ingredients for 4 servings:

  • 2 onions
  • 1 clove(s) garlic
  • 3 carrots
  • 150 g celeriac
  • 1 stalk(s) leek
  • 3 stalks of flat-leaf parsley
  • 2 tbsp olive oil
  • 1.2 liters of vegetable broth
  • 250 g sausages (cocktail sausages), from the jar
  • 150 g shell pasta, small
  • 1 handful of noodles (alphabet noodles)
  • some salt
  • some pepper, mixed, from the mill

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Peel the onions and garlic clove. Chop the garlic clove. Peel, trim, and rinse the carrots and celery, then finely dice them along with the onion. Trim the leek, cut it lengthwise, rinse it thoroughly, and slice it into thin rings. Rinse the parsley, shake it dry, and chop the leaves. Heat the olive oil in a saucepan and sauté the chopped garlic and diced onion. Then add the diced carrots, celery, and leek rings and sauté briefly. Deglaze with the vegetable stock and bring to a boil. Then add the pasta and simmer for about 5 to 8 minutes. Drain the cocktail sausages, add them to the soup, and heat through. Season the soup with salt and a few turns of freshly ground pepper, and sprinkle with the chopped parsley.
