Noodles with shrimp and coconut milk

Ingredients for 2 servings:

  • 400 g pasta (e.g. farfalle or penne)
  • salt water
  • 200 g shrimp(s), deveined, headless
  • 1 can coconut milk (400 ml)
  • 2 cloves garlic
  • 1 chili pepper(s)
  • 1 lime(s)
  • 1 small bunch of parsley, flat or coriander
  • salt and pepper
  • some oil, neutral

Working time approx. 10 minutes; Total time approx. 10 minutes

quick and tasty

Cook the pasta in salted water according to the package instructions until al dente. Meanwhile, finely chop the garlic, deseeded chili, and parsley. Sauté the garlic in a little oil, add the chili, and pour in the coconut milk. Bring to a boil. Let the shrimp simmer in the sauce until cooked through, then reduce the liquid slightly. Just before serving, add salt and pepper, the lime juice, and the parsley.
