Ingredients for 1 servings:
- 250 g flour
- 150 ml milk, slightly warmed
- 60 g butter, liquid
- 1 egg(s)
- 2 tsp dry yeast
- 2 tbsp, levelled sugar
- 1 sachet of vanilla sugar
- 1 tsp, leveled salt
- 1 handful of almonds
- 1 handful of walnuts
- 2 tbsp sugar
- 1 shot of water
- 80 g butter, soft
- 3 tbsp brown sugar
- 1 tsp cinnamon
- 1 handful of raisins
- ½ cup powdered sugar
- some water
- Fat for the mold
- Flour for the work surface, hands and rolling pin
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 15 minutes
Make a yeast dough from flour, slightly warmed milk, melted butter, egg, dried yeast, sugar, and salt. Cover and let rise until doubled in size. In the meantime, prepare the filling. Heat a pan with the sugar and a small splash of water over high heat until the sugar dissolves into a syrupy consistency. Add the nuts and stir over high heat until the dissolved sugar re-crystallizes and adheres to the nuts. Continue roasting until the sugar is lightly caramelized. Remove from the heat while stirring and pour onto a piece of baking paper. While cooling, pull the roasted nuts apart. Roughly shred the cooled roasted nuts in a food processor. Knead the risen dough with floured hands, transfer it to a floured surface, and roll it out with a floured rolling pin into a rectangle about 1/2 cm thick. Brush with softened butter and sprinkle with the brown sugar and cinnamon. Spread the shredded, roasted nuts and raisins over the entire surface. Roll up from the long edge and cut lengthwise. Twist the two halves together so that the open cut surfaces face up. Place in a 30 x 10 cm glass Pyrex loaf pan that has been greased and lined with baking paper. Leave no overhanging edges. Let the dough rise again until it has doubled in size and place it on the grill tripod of the combi microwave. For the grill tripod, only place the original supplied one on the glass turntable. Preheat the combi microwave to 180°C. Once the temperature is reached, depending on the microwave controls, open the door briefly, close it again, press start again, and bake for 15 minutes using the fan-assisted plus microwave combination program. On my Casa Welle, this is an automatic program, but the baking time is too long, so you should set an alarm. Make a glaze from a little water and powdered sugar and decorate the braid with the glaze while it cools on a cake rack.
