makes about 60 pieces

For the dough, mix the flour with the baking powder and sift into a mixing bowl. Add the sugar, vanilla sugar, orange zest, cinnamon, eggs, butter (margarine), cappuccino (cold coffee), hazelnuts and grated chocolate. Mix the ingredients with a hand mixer on high for about 2 minutes until you have a smooth dough. Place the dough on a baking tray lined with baking paper and smooth it out. Place a baking frame around it if necessary. Place the tray in the preheated oven. Top / bottom heat: preheated to about 180°, bottom rack fan: preheated to 160° Gas mark: preheated 2-3 Baking time: about 25 minutes. Transfer the pastry, including the baking paper, to a wire rack and allow to cool. Loosen and remove the baking frame. Cut the pastry into diamonds or triangles. To decorate, roll out the marzipan between two layers of cling film to just under 1/2 cm thick, cut out small stars and roll in sugar. To decorate, chop the chocolate coating into pieces and stir it into a smooth paste in a water bath over low heat. Sprinkle the pastries with a teaspoon and garnish with the marzipan stars. For a particularly sophisticated flavor, replace 50 ml of the cappuccino or coffee with brandy, coffee liqueur, or rum.
