Ingredients for 4 servings:

  • 300 ml milk (whole milk)
  • 300 ml cream
  • 70 g sugar
  • 4 egg yolks
  • 80 ml syrup (hazelnut)
  • 100 g hazelnuts, ground

It couldn’t be nuttier

Roast the hazelnuts in a fat-free pan. Bring the milk, cream, and hazelnuts to a boil. Meanwhile, mix the egg yolks with the sugar. When the milk and cream mixture boils, remove from the heat and strain 2-3 times through a fine-mesh sieve to remove the hazelnuts (otherwise the ice cream will taste very dry and floury). Then slowly stir the cream and milk mixture into the egg yolk and sugar mixture. Return everything to the pan, heat gently, but do not allow it to boil again. Let the mixture cool. Add the syrup and mix well. Transfer the mixture to the ice cream maker and process according to the manufacturer’s instructions.
