Nut spaetzle

Ingredients for 4 servings:

  • 500 g flour
  • 100 g nuts, ground
  • 4 eggs
  • 250 ml water, lukewarm
  • 2 tsp salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the flour with the nuts, then loosely mix in the eggs, water, and salt. Then, using a hand mixer fitted with the dough hook, work the dough until it is shiny and bubbly. The consistency should be such that it’s difficult to pull off the spoon. Press the dough in batches through a spaetzle press or spaetzle slicer and cook in boiling salted water until the spaetzle rise to the surface. If you prefer a more intense nutty flavor, you can increase the amount of nuts, but then reduce the amount of flour accordingly. This goes perfectly with game or mushroom dishes!
