Oatmeal cookies

Ingredients for 1 servings:

  • 250 g oat flakes, fine
  • 100 g butter
  • 100 g margarine
  • 125 g flour
  • 2 tsp baking powder
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 100 g dark chocolate coating, coarsely chopped
  • 150 g hazelnuts, whole or roughly chopped
  • 2 eggs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

with nuts and chocolate, makes about 50 pieces

Place the oats in a large bowl. Melt the butter and margarine together in a saucepan until light brown and pour over the oats. Gradually fold in the remaining ingredients (the eggs last) and let cool. Using a teaspoon, place small heaps onto baking sheets lined with baking paper (careful to keep space between them, as the cookies will double in size during baking). Bake in a preheated oven at 180°C (top/bottom heat) for 10-15 minutes at a time. The cookies are only nice and crispy when cold. So, even if it’s difficult, let them cool completely and then enjoy. Tip: You can also add other types of chocolate or nuts to the batter; raisins are delicious too. You can also leave them out; then the cookies will be reminiscent of those from the Swedish furniture store.
