Oatmeal patties

Ingredients for 4 servings:

  • 250 g oat flakes
  • 250 ml soy milk (soy drink) or soy rice drink
  • 1 onion(s)
  • 2 tbsp flaxseed, freshly ground
  • 4 tbsp water, hot
  • 1 tbsp vinegar, mild, e.g. apple cider vinegar
  • n. B. vegetables
  • salt and pepper
  • Paprika powder
  • n. B. spice(s)
  • Oil for frying

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Dice the onions and fry until translucent. Meanwhile, add the oats and soy milk to a larger bowl and let it rest for a few minutes. Grind the flaxseeds (chia seeds or 1 tablespoon each of both will also work), mix with 4 tablespoons of water heated to about 80°C, and let it rest briefly. Add the diced onions, vinegar, flaxseed puree, and spices as desired (don’t skimp on the salt) to the oat mixture. Now grate or dice vegetables as desired, add them, and knead everything thoroughly by hand. Heat oil, such as olive oil or rosemary oil, in a pan, form patties from the batter, and fry them until crispy on both sides. The cooking time depends on the thickness of the patties. The average is about five minutes per side. Note: Non-vegans can add about 100g of grated cheese to the batter in addition to the grated vegetables.
