Octopus (Paul Janke)

The perfect octopus (paul janke) recipe with a picture and simple step-by-step instructions.

Lemon butter

  • 400 g Arugula
  • 150 ml White wine
  • 1 Pc. Bay leaf
  • 5 Pc. Peppercorn white
  • 1 Pc. Organic lemon
  • 250 g Cold butter cubes
  • Salt
  • Pepper from the grinder
  1. Boil the squid in salted water and then fry them in the pan for a few minutes.
  2. Clean the arugula and place on the plate.
  3. Bring the white wine, bay leaf, pepper and lemon (sliced) to the boil, reduce to 110 ml and strain. Stir in butter with a hand blender. To taste.
