Octopus (Paul Janke)
The perfect octopus (paul janke) recipe with a picture and simple step-by-step instructions.
Lemon butter
- 400 g Arugula
- 150 ml White wine
- 1 Pc. Bay leaf
- 5 Pc. Peppercorn white
- 1 Pc. Organic lemon
- 250 g Cold butter cubes
- Salt
- Pepper from the grinder
- Boil the squid in salted water and then fry them in the pan for a few minutes.
- Clean the arugula and place on the plate.
- Bring the white wine, bay leaf, pepper and lemon (sliced) to the boil, reduce to 110 ml and strain. Stir in butter with a hand blender. To taste.
