Ingredients for 2 servings:

  • 3 tbsp potato flour
  • 1 tsp instant chicken broth
  • 1 tsp salt
  • ½ tsp sugar
  • ½ tsp dashi (from the Asian store)
  • 2 eggs
  • 1 carrot(s)
  • 2 slices of cooked ham
  • 5 cm leek
  • ½ can corn
  • Sauce, (Okonomiyaki sauce – Asian store)
  • Bonito (from the Asian store)
  • n. B. water
  • possibly corn, for garnishing
  • possibly cooked ham, for garnishing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, combine the dry ingredients such as potato flour, chicken stock powder, salt, sugar, and dashi powder in a bowl, add a little water, and mix until smooth. Then add the eggs to form a tough batter. Finely grate the carrot and mix with about 1/2 teaspoon of salt. Cut the ham into short, thin strips, then chop the leek into thin rings. Now add the carrots, ham, corn, and leek one after the other to the preheated, oiled pan and fry briefly. Pour the entire contents of the pan into the batter and stir gently. Oil the pan again and pour in the batter, cooking on medium heat until both sides are golden brown. Serve with the okonomiyaki sauce and bonito flakes, perhaps adding some corn and ham for garnish. Tip: If you like, you can tone down the flavor of the strong okonomiyaki sauce with a little mayonnaise.
