Old Bavarian apple cake

Ingredients for 1 servings:

  • 500 g apples
  • 2 tbsp rum
  • 250 g butter
  • 200 g sugar
  • 4 egg yolks
  • ½ tsp vanilla seeds, freshly scraped
  • 200 g flour
  • 1 tbsp baking powder
  • 125 g hazelnuts, ground
  • 2 tbsp cocoa powder
  • ½ tsp cinnamon
  • 4 egg whites
  • 50 g sugar
  • 1 pinch of salt
  • Fat and breadcrumbs for the form

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Peel and dice the apples, and marinate them in the rum. Cream the butter with sugar and egg yolk until fluffy, then add the vanilla seeds. Combine the flour with baking powder, hazelnuts, cocoa, and cinnamon and stir into the fluffy egg yolk mixture, along with the prepared apples. Beat the egg whites with sugar and salt until stiff peaks form, then carefully fold the beaten egg whites into the batter. Pour the mixture into a greased loaf pan dusted with breadcrumbs. Bake in a preheated oven at 175°C (top/bottom heat) for 1-1.5 hours. After baking, let the cake cool, then remove from the pan. Serve with whipped cream.
