Olive bread with bacon and cheese

Ingredients for 1 servings:

  • 250 g flour
  • 1 pinch of salt
  • 125 ml olive oil
  • 4 eggs
  • 125 ml white wine
  • 200 g bacon, diced
  • 200 g cheese (Emmental), grated
  • 200 g olives, green and black

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

The olive mixture should consist of at least two-thirds green olives. Mix all ingredients thoroughly, except for the olives. Finally, carefully fold in the olives. Pour the batter into a loaf pan. Preheat the oven to 200°C and bake the olive bread for 30-40 minutes. Test the bread with a skewer. This will be quite a substantial loaf, making it a great snack, for example, at a party or with an aperitif or sparkling wine. For this, it’s best to cut the baked bread into thirds lengthwise and then slice it. Snacking on grissini and pretzel sticks all the time gets boring after a while…
