Olivier Salad – Russian Potato Salad

- 400 g Cooked chicken
- 3 Pc. Potatoes
- 2 Pc. Carrots
- 3 Pc. Hard-Boiled eggs
- 200 g Gherkins
- 300 g Mayonnaise
- 30 g Spring onions
- 200 g Green peas cooked
- 1 tsp Salt
- 1 tsp Pepper
- Peel the potatoes and carrots and cook in salted water. Let cool, then dice.
- Cut the hard-boiled eggs and pickles into fine cubes.
- Cut the spring onions into thin rings.
- Put the potato and carrot cubes, eggs, pickles and spring onions in a large bowl, add the cooked green peas.
- Dice the cooked chicken and add it as well.
- Fold in the mayonnaise, season well with salt and pepper.
