Olivier Salad – Russian Potato Salad

The perfect olivier salad – russian potato salad recipe with a picture and simple step-by-step instructions.

  • 400 g Cooked chicken
  • 3 Pc. Potatoes
  • 2 Pc. Carrots
  • 3 Pc. Hard-Boiled eggs
  • 200 g Gherkins
  • 300 g Mayonnaise
  • 30 g Spring onions
  • 200 g Green peas cooked
  • 1 tsp Salt
  • 1 tsp Pepper
  1. Peel the potatoes and carrots and cook in salted water. Let cool, then dice.
  2. Cut the hard-boiled eggs and pickles into fine cubes.
  3. Cut the spring onions into thin rings.
  4. Put the potato and carrot cubes, eggs, pickles and spring onions in a large bowl, add the cooked green peas.
  5. Dice the cooked chicken and add it as well.
  6. Fold in the mayonnaise, season well with salt and pepper.
