One-pan meat noodles

Ingredients for 4 servings:

  • 500 g pasta, e.g. spirelli or croissants
  • 500 g minced meat
  • 1 onion(s)
  • 4 garlic cloves
  • 3 carrots
  • 100 ml red wine, dry
  • 3 tbsp tomato paste
  • 1 liter beef broth
  • salt and pepper
  • Oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Heat the oil in a large pan or pot and brown the minced meat. Meanwhile, peel and chop the onion and garlic. Peel and slice the carrots, and set aside. Brown the onions and garlic in the pan until translucent. Stir in 3 tablespoons of tomato paste and roast. Deglaze with a generous splash of red wine and add the carrots. Stir in the pasta and cover with beef stock. Simmer over low heat with the lid on, adding liquid frequently, until the pasta is cooked but still firm to the bite. Season to taste with salt and pepper. Tips: If you like, you can add frozen peas and/or a can of corn or other vegetables at this point. I like to serve the dish with shaved Parmesan cheese.
