Ingredients for 4 servings:
- 1 onion(s), chopped
- 1 garlic clove(s), pressed
- 250g spaghetti
- 250 ml coconut milk
- 600 ml vegetable stock
- ½ lemon(s), juice
- 250 g leaf spinach
- Salt
- chili flakes

Heat a little oil in a large pot and sauté the onions for about 3 minutes until translucent. Then fry the garlic for another minute. Add the uncooked spaghetti, vegetable stock, coconut milk, and lemon juice. Once the spaghetti has softened slightly, gently press it into the liquid with a wooden spoon. Cook for 15-18 minutes over medium heat. Once the spaghetti is al dente, stir in the spinach and grated lemon zest. Cook for about 2 minutes, then season with salt, pepper, and chili flakes.
