Gnocchi with pak choi in green curry

Ingredients for 2 servings:

  • 500 g pak choi
  • 200 g gnocchi, possibly from the refrigerated section
  • 75 g curry paste, green
  • 1 onion(s)
  • 2 garlic cloves
  • 1 can coconut milk
  • oil
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

A fiery curry with pak choi and gnocchi, refined with green curry paste

Remove the bok choy leaves, wash them, roughly chop them, and set them aside. Cut the stems into coarse strips. Sauté the bok choy stems in hot oil for 5 minutes, then add salt. Add the chopped onion and garlic, reducing the heat to half. Add the bok choy leaves and sauté for about 2 minutes. Pour the green curry paste into the center of the pan, fry briefly, then pour in the stirred coconut milk. Increase the heat and let the curry boil for 2 minutes. Add the gnocchi and simmer on low heat with the lid on until they reach the desired consistency. Add salt to taste. For more greenery, use basil leaves as garnish. Enjoy!
